Arugula Chicken Bagel Sandwich

This fast and healthy 4-ingredient sandwich will have your mouth watering for lunch time! The arugula's peppery flavor pairs perfectly with the chicken.

Equipment

  • 1 toaster or oven
  • 1 knife

Ingredients
  

  • 1 plain bagel cut in half
  • 2 Tbsp plain cream cheese (or spread of choice)
  • 1 Handful organic arugula (baby or regular)
  • 2-4 slices shaved deli chicken

Instructions
 

  • First, toast the bagel in a 375 degree oven for 5 minutes or in the toaster for 2 minutes.
  • Second, grab the cream cheese, or spread of choice, and apply it to one-half of the bagel.
  • Third, add the arugula on top of the cream cheese.
  • Now, add your chicken on top of the arugula folded in half to easily fit on the bagel. Add the top half of the bagel and enjoy!

Notes

*instead of using cream cheese for the spread, you could use hummus, cashew cream cheese, mustard, or avocado mayo as a dairy-free option. 
*baby arugula is less bitter and in my opinion tastes better on this sandwich
*keep the deli chicken cold, it gives the sandwich the perfect temperature
