Balsamic Strawberry Chicken Breast

- 2 boneless skinless chicken breasts
- 3/4 cup diced strawberries
- 2 Tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp garlic powder
- 1/2 or a yellow onion
- 1 tsp avocado oil or butter
Fine dice the onion and slice the strawberries into small chunks. Set aside.
Heat avocado oil or butter in a skillet over medium heat.
Add onions and cook on medium heat for 2 minutes.
While the onions cook, in a small bowl, combine salt, pepper, onion, and garlic.
Season chicken with the mixture on both sides then add to the pan with the onions. Cook on medium for 8 minutes.
Flip the chicken and cook for 8-10 minutes until it is cooked fully. Add a little water if bottom of the pan is starting to burn.
While the chicken is cooking, in a small bowl, stir together honey and balsamic vinegar with a spoon.
When there are 3 minutes left on the chicken cooking, pour balsamic honey mixture into the pan and add strawberries.
While it cooks stir the berries and liquid to combine and prevent burning.
Take off heat and enjoy!
