BBQ Chicken Flatbread Pizza (Grilled or Baked)

This bbq chicken flatbread pizza is the perfect summer dinner idea! You can grill or bake it, and I've even included my recipe for homemade Nashville BBQ sauce - it's the perfect sauce for this recipe. You can use any flatbread you like. We always use my homemade sourdough flatbread. I hope you enjoy this recipe as much as we do!

Ingredients
  

Chicken

  • 1 boneless skinless chicken breast
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp garlic powder (salt-free)

Homemade Nashville-Style BBQ Sauce

  • 1 cup ketchup (organic with clean ingredients)
  • 1/4 cup brown sugar
  • 1/4 cup + 4 Tbsp apple cider vinegar
  • 2 Tbsp worcestershire
  • 1/8 tsp cayenne pepper
  • 1/4 tsp salt
  • 1 tsp ground black pepper
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder (salt-free)
  • 1/2 tsp onion powder (salt-free)

Other

  • 1 flatbread (homemade sourdough is our favorite!)
  • 1 + 1/2 cups low-moisture mozzarella cheese, grated
  • optional - fresh cilantro

Instructions
 

Season Chicken

  • Season the chicken breast on both sides with the salt, pepper, and garlic powder.

Grill or Bake Chicken

  • Preheat your grill (350 degrees Fahrenheit) or oven (400 degrees Fahrenheit)
  • Cook on the grill at 350 degrees Fahrenheit for 10-12 minutes or until fully cooked (flip half way through).
    OR In the oven at 400 degrees Fahrenheit for 20 minutes in a baking dish until fully cooked.
  • After cooking, let chicken rest for 5 minutes then shred it. Set aside for now.

Make the BBQ Sauce

  • (You can do this while the chicken cooks)
    Add all bbq sauce ingredients into a small mixing bowl and whisk until combined.

Assemble the Pizza

  • Shred the cheese if you haven't already and set aside.
  • Add a layer of bbq sauce to the flatbread (as thick as you like).
  • Add shredded chicken to the flatbread and finally the shredded cheese.

Grill or Bake Pizza

  • Cook pizza on the grill for 5-10 minutes at 375 degrees Fahrenheit (low-medium heat) until cheese is melted and bubbly. Close the grill if using an outdoor grill. If using an indoor grill hover the top grill plate just over the top. If it’s not melting fast enough you can turn the temperature up to 425 degrees but keep a close eye on it.
    OR In the oven at 400 degrees for 8-10 minutes until cheese is melted and bubbly.
  • Once cooked, slice pizza into pieces, add cilantro to the top. Enjoy!
