Best Hamburger Gravy Recipe (for Biscuits and Gravy)

No matter the time of day, this homemade hamburger gravy piled high on sourdough biscuits is a pleasure to all taste buds. Dried thyme paired with a hint of smoked paprika marries with lean ground beef to flavor the thick homemade gravy.

Equipment

  • 1 skillet

  • 1 whisk

Ingredients
  

Hamburger

  • 1 tsp olive oil or avocado oil
  • 1/2 pound ground hamburger
  • 1/4 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper

Gravy

  • 1/3 cup all-purpose flour
  • 3 cups milk (dairy or nondairy) cashew cream is my favorite
  • 1/4 tsp pepper
  • 1/8 tsp dried thyme

Instructions
 

Hamburger

  • First, heat a pan with 1/2 tsp of olive oil on medium-high heat.
  • Next, add ground hamburger, smoked paprika, salt, and pepper and cook on medium heat for 6-8 minutes.

Gravy

  • Now to make the gravy, leave the cooked ground hamburger in the skillet and add the flour. Still cooking on medium heat, use a wooden spoon to stir your roux for 2 minutes.
  • Next, whisk in milk, pepper, and dried thyme to the roux cooking on medium-low. Continue whisking until gravy begins to thicken about 5 minutes
  • Finally, cook on low for about 5 minutes to fully heat and serve over biscuits!

Notes

  • How to thicken hamburger gravy? When you make the roux with meat drippings and flour, this mixture thickens your gravy creating the desired texture. Some people add a little cornstarch mixed with water at the end of gravy recipes to thicken it but I don't recommend this unless it needs to be thickened more.
  • What adds flavor to the gravy? The meat drippings from cooking the ground beef as well as the spices flavor this gravy recipe.
  • Can I freeze this hamburger gravy? Yes! Just be sure to store it in a freezer-safe glass container that is air-tight. This is my favorite glass container for freezer storage. Also when you go to reheat the frozen gravy simply take the lid off, stick it in the oven, and then begin preheating at 400 degrees. This warms your container up with the oven to prevent the glass from breaking while warming up the gravy.
  • Will the gravy separate when reheating it? More than likely it will separate after you heat it back up. Simply stir to recombine and it'll taste fresh. Avoid reheating in the microwave as it will zap the taste right out of your gravy.
