First, add flour and water to a mixing bowl and let sit for 5 minutes to hydrate. Don't mix yet.
Next, add salt and sourdough starter to the bowl and mix until combined to form a shaggy dough (this is the perfect consistency)
Using your hands gently combine the dough until it forms a ball of dough
Cover the mixing bowl with a lid or a kitchen towel. Let rise in a non-drafty place for 10-12 hours or overnight.
After 10-12 hours, uncover your dough and turn it out on a lightly floured surface.
It's time to shape the dough. For a round loaf make a square, fold it in half to make a rectangle, and using your plastic or metal scraper move the dough in a circle on the counter. This will create a round loaf and form tension.
Do this circular motion 3-4 times to shape your dough into a circle.
Then place dough into a rattan basket with a linen cover or clean bowl and cover it with a towel. Let the dough rise for 1 hour on the counter
Then place covered dough in the fridge for an additional hour.
Next, place your Dutch oven, bread cloche , or baking pan into the oven and preheat it to 425 degrees Fahrenheit.
Once preheated, take the bakeware out of the oven and sprinkle a light dusting of flour inside (if not using parchment paper).
Then place your bread in the bakeware and use a bread lame to make a slice on top.
Finally, if using a Dutch oven or bread cloche bake for 30 minutes with the bakeware lid on and then an additional 15-20 minutes with the lid off. If you're using a different type of pan bake the same amount of time but cover it with foil during the covered baking time. Let cool and enjoy!
