Easy Cheesy Jalapeno Corn Casserole

If you're looking for a Southern twist on a classic holiday recipe, this cheesy jalapeno corn casserole will be just what you're looking for! - 1/2 cup diced jalapenos (small - medium size dice)
- 1 cup frozen corn (organic is best)
- 1 1/2 cups milk or cream (dairy or dairy-free)
- 1 egg
- 1 3/4 cup shredded cheddar cheese
- 2 tsp salt
- 1 cup cornmeal (medium ground or fine)
- 1 cup unbleached all-purpose flour
- 1/4 cup raw honey
- 1/4 cup melted butter
- 2 tsp baking powder
- 1 tsp baking soda
First, preheat oven to 400 degrees
Second, shred cheese and dice jalapenos (remove seeds) into small to medium size pieces.
Third, add all ingredients except the cheese into a mixing bowl and stir until combined.
Forth, pour mixture into a greased casserole dish (medium-sized) and top with shredded cheese.
Fifth, bake casserole for 45-55 minutes, add shredded cheese to the top when there's 10 minutes left on the timer. Enjoy!
