Easy Citrus Marinated Chicken Breast

When I make this citrus-marinated chicken breast for supper, I love pairing it with a bowl of brown rice. The flavors pair perfectly, and it's a light summer meal. Each bite is full of orange, lemon, and spices. When you're not sure what to cook this summer, this recipe will be waiting for you!

- 2 chicken breasts boneless, skinless
- Juice from 2 oranges
- Juice from 1 lemon
- 2 Tbsp raw honey
- 3/4 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp dried thyme
- 1/4 tsp garlic powder
- 1/2 of an onion
Add the juice from both oranges and the lemon, honey, salt, pepper, thyme, and garlic to a bowl and mix to combine. Set aside for now.
Lightly grease a casserole dish with avocado oil or olive oil
Dice half of an onion into small chunks and add them to the casserole dish along with both chicken breasts.
Pour the citrus mixture over chicken and onions.
Cover the casserole dish and place it in the fridge for 2- 8 hours to marinate.
Preheat the oven to 375 and get the casserole dish out of the fridge while you wait.
Bake for 25-30 minutes. Enjoy!
