Easy Citrus Marinated Chicken Breast

When I make this citrus-marinated chicken breast for supper, I love pairing it with a bowl of brown rice. The flavors pair perfectly, and it's a light summer meal. Each bite is full of orange, lemon, and spices. When you're not sure what to cook this summer, this recipe will be waiting for you!

Ingredients
  

  • 2 chicken breasts boneless, skinless
  • Juice from 2 oranges
  • Juice from 1 lemon
  • 2 Tbsp raw honey
  • 3/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp dried thyme
  • 1/4 tsp garlic powder
  • 1/2 of an onion

Instructions
 

  • Add the juice from both oranges and the lemon, honey, salt, pepper, thyme, and garlic to a bowl and mix to combine. Set aside for now.
  • Lightly grease a casserole dish with avocado oil or olive oil
  • Dice half of an onion into small chunks and add them to the casserole dish along with both chicken breasts.
  • Pour the citrus mixture over chicken and onions.
  • Cover the casserole dish and place it in the fridge for 2- 8 hours to marinate.
  • Preheat the oven to 375 and get the casserole dish out of the fridge while you wait.
  • Bake for 25-30 minutes. Enjoy!
