This eggless banana chocolate chip bread pudding will satisfy your sweet cravings. With its rich and gooey texture, this dessert is a delightful twist on traditional bread pudding. Because of the bananas it contains no egg.
Remove the peels from all 4 bananas then place them into a mixing bowl. Discard the peels. Use a fork or masher to mash bananas until they turn into a thick paste.
Now add honey, ricotta cheese, and milk. Stir until evenly incorporated.
Add baking powder and flour to wet ingredients. Stir just until everything is evenly mixed. Don't over-mix.
Optional: Stir in chocolate chips and/or walnut pieces.
Lightly grease a ceramic baking dish (about 9x12") and pour the banana bread pudding mixture in.
Bake uncovered for 35 minutes. (If you prefer a more moist bread pudding, bake for 30 minutes instead.)
