Eggless Chocolate Chip Banana Bread Pudding

This eggless banana chocolate chip bread pudding will satisfy your sweet cravings. With its rich and gooey texture, this dessert is a delightful twist on traditional bread pudding. Because of the bananas it contains no egg.

Ingredients
  

  • 4 extra ripe bananas
  • 2 tsp raw honey
  • 1 cup ricotta cheese
  • 3/4 cup milk
  • 1 cup all-purpose flour
  • 1 1/4 tsp baking powder

Optional Batter Mix-Ins

  • 1/3 cup semi-sweet chocolate chips
  • 1/3 cup walnut pieces (optional)

Instructions
 

  • Preheat your oven to 425 degrees Fahrenheit.
  • Remove the peels from all 4 bananas then place them into a mixing bowl. Discard the peels. Use a fork or masher to mash bananas until they turn into a thick paste.
  • Now add honey, ricotta cheese, and milk. Stir until evenly incorporated.
  • Add baking powder and flour to wet ingredients. Stir just until everything is evenly mixed. Don't over-mix.
  • Optional: Stir in chocolate chips and/or walnut pieces.
  • Lightly grease a ceramic baking dish (about 9x12") and pour the banana bread pudding mixture in.
  • Bake uncovered for 35 minutes. (If you prefer a more moist bread pudding, bake for 30 minutes instead.)
