Fresh Mint Iced Coffee From Scratch

This fresh mint iced coffee will solve your summer coffee cravings! It's simple to make at home with any type of coffee maker. This drink will be on repeat all summer in our house.

Iced Coffee
- 1 cup strong cooled-down coffee
- 1/2 cup milk or cream
- 3 Tbsp homemade mint simple syrup
- Handful of ice
Mint Simple Syrup
- 1/3 cup pure cane sugar
- 1/3 cup water
- 4 large fresh mint leaves
Make a pot of strong coffee and pour it into a glass to cool. Set aside.
Add water and cane sugar to a saucepan and heat over medium heat stirring constantly until sugar is dissolved.
Add in mint leaves. Simmer for 10 minutes on low-medium, stirring occasionally so it doesn’t burn.
Once mint syrup has finished simmering take it off the heat and let cool while you make the rest of the drink.
Pour the cooled-down coffee into a different glass. Add in milk and mint simple syrup.
Stir to combine and add ice. Enjoy!
