Fresh Peach Pie Filling From Scratch

Fresh peach pie filling can be used in many recipes. From homemade pies to cobblers and even scooped over ice cream. In our house, we love using this filling for a variety of treats but our favorite is in homemade sourdough Danish pastries.

Servings 1 pie worth of filling
- 6 peaches organic is best
- 3/4 cup cane sugar
- 1 Tbsp lemon juice
- 1/4 tsp ground cinnamon
- 1 Tbsp cornstarch + 1 tsp water
Rinse, peel, and slice peaches in half to remove the seeds.
Slice each half into slices then cut those in half to make chunks
Add peach chunks, sugar, lemon, and cinnamon to a pot and cook on medium for 25 minutes, stirring occasionally.
Once timer goes off, mix cornstarch and water in a small bowl and add to cooked peach filling.
Stir continuously for 1 minute then take off burner.
Let filling cool or use for any dessert you're making. Enjoy!
