Mango Chicken Tacos (easy sheet pan recipe)

Mango chicken tacos are easy to whip up any night of the week. Just dump the ingredients on a parchment-lined sheet pan and bake for 25 minutes. Each bite is full of savory chicken, sweet mango, and fresh cilantro. If you're anything like me, you'll crave these tacos all summer long!

Ingredients
  

  • 1/2 of a yellow onion
  • 1/2 of a jalapeño
  • 1 mango
  • 1 large chicken breast boneless skinless
  • 1 tsp chili powder salt-free
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • tortillas soft or hard shell (homemade is best)
  • optional - fresh cilantro

Instructions
 

Prep

  • Preheat oven to 425 degrees Fahrenheit and cover a sheet pan with parchment paper.
  • In a small bowl, stir together garlic powder, pepper, salt, and chili powder with a spoon until evenly mixed. Set aside.
  • Slice half of an onion into strips and set aside.
  • Cut up mango into chunks and set it aside.
  • Slice jalapeño into small chunks and remove the seeds. Set aside.

Bake

  • Place chicken on the sheet pan along with sliced onion, diced jalapeño, and mango cubes.
  • Pour seasoning evenly over the chicken, onions, jalapeño, and mango.
  • Bake for 25 minutes or until the chicken is fully cooked.

Assemble Tacos

  • Remove from oven, dump chicken off of parchment paper and onto the pan. Shred chicken with 2 forks (or place in a bowl and shred with an electric mixer on low speed).
  • Grab tortillas (you can warm them if preferred) and fill them with a generous amount of the spicy baked mango chicken.
  • Finish them off with an optional topping of fresh cilantro and a dollop of sour cream if you desire. Enjoy!

Recipe Variations

  • Need more? Double the recipe
  • You don't like spicy food? Leave out the jalapeño peppers or substitute them for green bell peppers.
  • Want more spice? Double the jalapeño for a spicier taste.
  • Want to make it kid-friendly? Leave out the jalapeños so it won't be spicy.
  • Need a substitute for the mangos? Try frozen mangos or fresh pineapple chunks.
  • For the best taco shells, whip up a batch of my sourdough tortillas.
  • To add more freshness, top your tacos with fresh cilantro.
