Mini Sourdough Fruit Pizza (with a sourdough sugar cookie crust)

A mini sourdough fruit pizza is by far my favorite birthday treat and summer dessert. My recipe is wholesome, simple, and irresistible. The crust is a sourdough sugar cookie, the cream cheese is pure with honey whipped in, and the berries are seasonal. In one bite, you'll experience a soft, sweet, creamy, and fresh taste that will keep you coming back for more!

Ingredients
  

Mini Sourdough Sugar Cookie Crust

  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 cup sourdough starter (fed or discard)
  • 1 egg
  • 1/3 cup softened salted butter
  • 2/3 cup cane sugar
  • 1/4 tsp salt

Honey Cream Cheese Frosting

  • 8 oz block cream cheese softened
  • 1 1/2 Tbsp raw honey
  • 1 tsp milk

Fruit (of your choice)

  • 1 cup blueberries
  • 1 cup raspberries sliced in half
  • 1 cup strawberries sliced or chunked

Instructions
 

Mini Sourdough Sugar Cookie Crusts

  • Add softened butter, salt, vanilla, and sugar to a bowl and mix with a hand mixer on medium until smooth.
  • Add in sourdough starter and egg and continue mixing until evenly combined.
  • Add in flour, 1/2 cup at a time, and continue mixing until evenly combined. Prevent over mixing the dough.
  • Cover the bowl with a kitchen towel or lid and refrigerate for 2 hours minimum up to 24 hours.
  • Once refrigeration is done, lightly flour your work surface and gently roll out the dough to 1/2 inch thick.
  • Use cookie cutters or a mason jar to cut out shapes, re-rolling leftover dough after initial cut-outs.
  • Place cookies on a lightly floured sheet pan about 2 inches apart.
  • Preheat oven to 350 degrees and bake for 10-12 minutes (cookies are done just after setting, and will be lightly brown).
  • Place cookies on a wire cooling rack until completely cooled.

Honey Cream Cheese Frosting

  • While cookies are baking, in a medium-sized bowl use an electric mixer to combine honey, cream cheese, and milk until smooth on medium speed. Set aside.

Assembling Mini Fruit Pizzas

  • Once the cookies are cooled, spread a layer of cream cheese frosting on top.
  • Then top with berries in any way you prefer. Enjoy!

Notes

Storing Instructions

You can store these fruit pizzas, assembled, in an airtight container in the fridge for 3 days. Or you can store them unassembled so they'll last longer. Do this by storing the cookies in an airtight container at room temperature for 4-5 days. Store the cream cheese frosting and sliced fruit in the fridge for up to 5 days.
