Ingredients

  • 4 large or 5 small russet potatoes
  • water for rinsing and boiling
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 2 Tbsp butter I love grass-fed
  • 1/4 cup cream I use homemade cashew cream

Instructions

  • Rinse dirt off of potatoes, peel, and slice into medium-sized cubes/chunks.
  • Add potato cubes to a pot and rinse 2x with water, draining in between.
  • Fill pot of potatoes with fresh water about 2 inches above potato cubes.
  • Bring pot to a boil over medium-high heat.
  • After boiling place on the lid, turn temperature down to medium-low, and cook for 15 minutes (fork or spoon will easily slice through potato when fully cooked).
  • Drain cooked potatoes and pour into a dish or glass bowl
  • Use a potato masher or electric hand mixer to mash potatoes until desired texture, and sit aside.
  • Add butter, cream, salt, and pepper to the empty pan just used to cook potatoes and heat over medium on the stovetop for 1-2 minutes. Stir to combine
  • Pour melted butter mixture into mashed potatoes and stir with a spoon just until combined.
  • Serve and enjoy!
