Roasted Apple Butter Chicken Breast

Ingredients
  

  • 2 boneless skinless chicken breast
  • 1/2 cup apple butter
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp onion powder
  • 2 Tbsp apple cider vinegar

Instructions
 

  • Preheat the oven to 375 degrees and line a baking sheet with parchment paper
  • In a small bowl combine apple butter, salt, pepper, onion powder, and apple cider vinegar. Mix to combine.
  • Take each chicken breast and butterfly it. To do this you’ll cut the best horizinatally in half only 3/4 of the way through. Then you’ll open up the breast so it’ll be thin and large.
  • Dip each butterflied chicken breast in the apple butter mixture. Make sure each side is coated.
  • Place the opened chicken breasts on the sheet pan (make sure they're not touching) and spread the excess apple butter on top of the chicken breasts.
  • Bake at 375 degrees Fahrenheit for 25-30 minutes until cooked all the way through. Enjoy!

Notes

Recipe Variations

For this recipe, you can use any kind of chicken, whether that's a chicken thigh, leg, whole chicken, etc. Adjust the cook time accordingly.

Storing Leftovers

Store cooled-down leftovers in an airtight container in the fridge for 2 days or the freezer for 1-2 months.

Reheating Instructions

To reheat, place the chicken refrigerated or frozen in a preheated oven at 375 degrees until warm.
