1/2 cup fed sourdough starter (fed 4-12 hours before using) 2 Tbsp avocado oil (or softened butter) 1/2 tsp sea salt 2 cups unbleached all-purpose flour 3/4 cup milk (dairy or dairy-free) 2 Tbsp melted butter for brushing tops
In a big mixing bowl, combine sourdough starter, avocado oil or butter, and milk.
Add salt and flour, mix until a dough forms and everything is combined.
Transfer the dough to a lightly floured surface and knead by hand or with a bread hook attached to a mixer for 6 minutes.
Place the kneaded dough in a clean bowl, cover it with a towel.
Let it sit at room temperature for 10-12 hours to bulk ferment (needs to double in size).
Once the bulk ferment is done, divide the dough into 8 similar-sized pieces and roll them into balls.
Line a baking sheet with parchment paper and place the dough balls slightly touching each other.
Cover the baking sheet with a kitchen towel and let rolls rise 2 hours.
After this you can continue the recipe or place them in the fridge for up to 12 hours if you need more time.
Preheat the oven to 400°F and bake for 16-18 minutes.
After baking, brush the rolls with melted butter and place them on a cooling rack. Enjoy!
