Grease the crockpot with olive or avocado oil.
Dice the onion into medium size pieces.
In the crockpot, combine diced onion, ground beef, salt, pepper, chili powder, cumin, cinnamon, water, and garlic. Stir and cover.
Cook on low for 6-7 hours or high for 3-4 hours.
1.5 hours before it's done, rinse sweet potatoes and poke them all the way around with a fork.
Preheat the oven to 425 degrees.
Place sweet potatoes on a sheet pan and bake for 1 hour.
Once baked, slice sweet potatoes down the center and fluff insides with a fork.
Uncover taco meat, stir, and add it to the sweet potatoes.
Add your favorite toppings and enjoy!
