Taco Stuffed Sweet Potatoes

These taco stuffed sweet potatoes make the perfect weeknight meal. They're packed with flavor and nutrition, not to mention the simplicity.

Ingredients
  

  • 1/2 yellow onion
  • 1/2 lb. ground beef (frozen or thawed) (lean grass-fed is my favorite)
  • 1/2 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1 1/2 Tbsp chili powder
  • 1/4 tsp ground cumin
  • 1/8 tsp ground cinnamon
  • 1/2 tsp garlic powder
  • 1/2 cup water
  • 2 sweet potatoes (organic is best)

Instructions
 

  • Grease the crockpot with olive or avocado oil.
  • Dice the onion into medium size pieces.
  • In the crockpot, combine diced onion, ground beef, salt, pepper, chili powder, cumin, cinnamon, water, and garlic. Stir and cover.
  • Cook on low for 6-7 hours or high for 3-4 hours.
  • 1.5 hours before it's done, rinse sweet potatoes and poke them all the way around with a fork.
  • Preheat the oven to 425 degrees.
  • Place sweet potatoes on a sheet pan and bake for 1 hour.
  • Once baked, slice sweet potatoes down the center and fluff insides with a fork.
  • Uncover taco meat, stir, and add it to the sweet potatoes.
  • Add your favorite toppings and enjoy!
