How to Make Grilled Chicken Bites with Creamy Garlic Sauce

Quick Note: You can double this recipe as many times as you’d like.

Slice the chicken breast into small chunks (bite-sized).

In a mixing bowl, add chicken, garlic powder, salt, pepper, avocado oil, and lemon juice. 

Optional: You can pause this recipe and let the chicken marinate, covered, in the fridge up to 6 hours. But you don’t have to do this.

Heat your grill (indoor or outdoor) to medium heat, 350 degrees Fahrenheit.

Once it’s hot, place the chicken onto the grill, ensure they’re not touching. Cook for 4-5 minutes.

Flip and cook another 4-5 minutes or until the chicken is fully cooked. You can figure this out by cutting a piece in half or using a meat thermometer.

While the chicken is cooking whip up the creamy garlic sauce by adding the butter to a small sauce pan and warming over medium heat on the stovetop.

Once the butter is melted add in minced garlic, salt, parsley, and half and half. 

Stir to combine and warm on low-medium heat for 4-5 minutes, or until warm.

Turn heat to low and whisk in grated Parmesan until melted and combined. Take off heat, and set aside until chicken is cooked.

How to Make this Recipe Ahead

After mixing the chicken bites in the oil, seasoning marinade you can let the chicken marinate, covered, in the fridge up to 6 hours. This is optional.

Storing Leftover Chicken Bites

In the fridge: When the bites are cooled after cooking, store them in an airtight container in the fridge for 2-3 days.

In the freezer: After they’re cooled down from cooking, store them in a freezer-safe container. They’ll last up to 3 months in the freezer.

Best Way to Reheat Grilled Chicken Bites

If you stored your leftover chicken in the fridge, place it in a skillet with 1 tsp of butter or avocado oil. Heat over low-medium until warm.

If you stored your chicken in the freezer, place it frozen in a new pan with a little butter or avocado oil and warm on 400 degrees until warm.

Molly’s Tips for Making this Recipe

  • For a deeper flavor, let the chicken bites marinate in the oil, seasoning mix for 2-4 hours in the fridge before cooking.
  • Cook chicken bites on lower heat. Don’t get tempted to turn up the grill so the chicken will cook faster. This will dry it out.
  • For juicy chicken, don’t skip the oil. If you can’t have avocado or olive oil, please skip it. But if you can, make sure you add it in. The results are so good!
  • Use clean tongs at the end. When you’ve cooked the chicken, use a clean set of tongs to remove and serve them. This prevents any raw chicken contamination on your food.
