Easy Slow Cooker Pot Roast with Potatoes and Peppers

This easy slow cooker pot roast is full of potatoes, peppers, and spices that are just as good the next day as they are right after cooking. Everyone has their favorite way of cooking a beef roast, and this is mine. It's got the best savory flavor from wholesome ingredients.

Ingredients
  

  • 1 beef chuck roast (any size)
  • 2 russet potatoes
  • 1/4 of a green bell pepper
  • 1/2 of a large onion
  • 1/2 of a jalapeƱo
  • 2 tsp ground black pepper
  • 1 tsp salt
  • 2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 cup water

Instructions
 

  • Place the beef chuck roast into a lightly greased slow cooker.
  • In a small bowl, mix together black pepper, salt, garlic powder, and smoked paprika.
  • Sprinkle seasoning mix over roast, ensuring it's evenly coated.
  • Rinse, dry, peel, and slice potatoes into large chunks or halves (your choice) and add them into slow cooker on the sides of the roast.
  • Dice the onion and jalapeno into small pieces and add them to the slow cooker on top of roast and potatoes.
  • Slice bell pepper into small chunks and add them to the slow cooker on top of roast and potatoes.
  • Add water, and top with the lid.
  • Cook on low for 7-8 hours or on high for 4-5 hours. Don't open the lid while it's cooking.
