After settling into our middle Tennessee home, I decided it was time to create my very own way of cooking a pot roast. Everyone has their favorite recipe, whether it’s theirs or one someone else makes. My recipe is inspired by the food culture all around me.

Tips for Cooking Beef Roast in a Crockpot

  • Never open the lid of a slow cooker while it’s cooking.
  • Slice potatoes and bell peppers large so they don’t quickly turn to mush.
  • Lightly grease your crockpot with olive or avocado oil before placing items inside.
  • Cut up the jalapeno easily by using a box grater.

Ingredients You’ll Need

  • 1 beef chuck roast (any size)
  • 2 russet potatoes
  • 1/4 of a green bell pepper
  • 1/2 of a large onion
  • 1/2 of a jalapeño
  • 2 tsp ground black pepper
  • 1 tsp salt
  • 2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 cup water

Place the beef chuck roast into a lightly greased slow cooker.

In a small bowl, mix together black pepper, salt, garlic powder, and smoked paprika.

Sprinkle seasoning mix over roast, ensuring it’s evenly coated.

Rinse, dry, peel, and slice potatoes into large chunks or halves (your choice) and add them into slow cooker on the sides of the roast.

Dice the onion and jalapeno into small pieces and add them to the slow cooker on top of roast and potatoes.

Slice bell pepper into small chunks and add them to the slow cooker on top of roast and potatoes.

Add water, and top with the lid.

Cook on low for 7-8 hours or on high for 4-5 hours. Don’t open the lid while it’s cooking.

Storing Leftover Pot Roast

I like to store leftover pot roast in an airtight freezer container, even if we eat the leftovers the next day. It tastes so good and will last up to 3 months. Be sure this container is also oven-safe for easy reheating. 

Reheating Leftover Pot Roast

My favorite way to reheat leftover roast is in a baking dish in the oven. Turn it on at 400 degrees and reheat until desired warmth. It tastes 100 times better than the microwave.

If you’re reheating frozen pot roast, place the frozen, oven-safe dish into the oven before preheating. Then turn the oven on to preheat. Never place a cold dish in a hot oven.

Actually, they’ll go on the sides of the roast, but if there isn’t any room, place them on the bottom. 

Do you put peppers on top or bottom of pot roast?

For this recipe, place peppers on top of the roast and potatoes.

Don’t peppers turn mushy in the crockpot?

Peppers do get really soft in the crockpot, but for this recipe, you want that. You want the peppers to melt into the roast for maximum flavor. 

Shouldn’t I add more liquid to the slow cooker?

For this recipe, the natural juices of the roast will create more liquid while cooking without watering down the flavors.
