Healthy Buffalo Chicken Sweet Potatoes

This buffalo chicken stuffed sweet potato recipe isn't just healthy and wholesome, it's also an easy weeknight meal! The fluffy baked sweet potato is a perfect foundation for slow-cooked buffalo chicken.

Ingredients
  

  • 1 large or 2 small chicken breasts boneless, skinless - frozen or fresh
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1 small yellow onion
  • 1/2 cup Franks Buffalo Sauce
  • 1/4 cup water
  • 2 small-medium sweet potatoes
  • 1 Tbsp olive or avocado oil (for greasing)

Instructions
 

Buffalo Chicken

  • Dice onion into small pieces, a fine dice.
  • Add diced onion, chicken breasts, salt, pepper, garlic powder, buffalo sauce, and water to the slow cooker.
  • Turn on high and cook 3-4 hours or low 7-8 hours
  • After cooking shred chicken by hand or using an electric hand mixer with beater attachments.

Sweet Potatoes

  • When chicken has 1 hour left to cook, preheat oven to 425 degrees.
  • Rinse sweet potatoes to remove any dirt and pat dry.
  • Use a fork to poke holes around the sweet potatoes.
  • Place sweet potatoes on a parchment-lined sheet pan and bake for 40-45 minutes or until cooked all the way through
  • Once cooked, cut sweet potatoes 1/2 the way through down the center to make a boat. Use a fork to fluff the sweet potato insides and top with chicken and ranch or Greek yogurt.
