On one of my husband and I’s date nights, we went to a farm fresh restaurant in Franklin Tennessee called Ground. At the restaurant, Tyler ordered a buffalo chicken stuffed baked potato and fell in love with the flavor combo.

A few weeks later, I decided to recreate this meal with a twist. That’s how this recipe was born. The sweet potato adds more nutrients and the crockpot makes preparing the meal simple. Who doesn’t like a simple, healthy meal?

Ingredients

  • 1 large or 2 small chicken breasts (boneless, skinless – frozen or fresh)
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1 small yellow onion
  • 1/2 cup Franks Buffalo Sauce
  • 1/4 cup water
  • 2 sweet potatoes

How to Make Buffalo Chicken Stuffed Sweet Potatoes

Buffalo Chicken

  1. Dice onion into small pieces, a fine dice.
  2. Add diced onion, chicken breasts, salt, pepper, garlic powder, buffalo sauce, and water to the slow cooker.
  3. Turn on high and cook 3-4 hours or low 7-8 hours
  4. After cooking shred chicken by hand or using an electric hand mixer with beater attachments.

Sweet Potatoes

  1. When chicken has 1 hour left to cook, preheat oven to 425 degrees.
  2. Rinse sweet potatoes to remove any dirt and pat dry.
  3. Use a fork to poke holes all the way around the sweet potatoes.
  4. Place sweet potatoes on a parchment lined sheet pan and bake for 40-45 minutes or until cooked all the way through
  5. Once cooked, cut sweet potatoes 1/2 the way through down the center to make a boat. Use a fork to fluff the sweet potato insides and top with chicken and ranch or Greek yogurt.

Chicken Leftovers: If you have leftover chicken, put it in an airtight container. You can keep it in the fridge for up to 2 days. Or, store it in the freezer for up to 3 months.
