Homemade Vanilla Sweet Cream Cold Brew

Indulge in the irresistible Homemade Vanilla Sweet Cream Cold Brew, a refreshing and plant-based delight that combines the smoothness of cold brew coffee with a luscious layer of sweet vanilla-infused cashew cream. With this simple recipe, you can create a delicious beverage at home, saving money while you're at it!

1 blender
1 reusable straw
1 cup or mug
- 1 cup cooled down brewed coffee *see notes
- 1 cup cashew milk or cream *see notes
- 1 1/2 Tbsp Date Syrup (or honey or pure maple syrup)
- 3/4 tsp pure vanilla extract
- 1/4 cup ice *see notes
First, if your brewed coffee isn't cooled down to room temperature, make sure you do that. Then add it to a glass or mug.
Next, add cashew milk/cream to a blender along with date syrup (or sweetner of choice) and vanilla. Blend the vanilla sweet cream mixture for 20-30 seconds. Don't skip this length of blending, it makes a creamy texture.
Add ice to your cold brew in the glass and pour the vanilla sweet cream mixture over it. Finally, stir with a metal or glass straw and enjoy!
*Cooled Down Coffee = brewed coffee that has cooled down to room temperature (french press, drip, pour-over, instant, etc.)
*Cashew Milk or Cream = store-bought unsweetened cashew milk or my favorite: homemade cashew cream made by soaking 1 cup of raw cashews in water overnight and then blending them in a blender with 1.5 cups of water for 1 minute.
*Date Syrup from Trader Joe's is both affordable and organic, I highly recommend and it doesn't raise blood sugar levels! You can also use raw honey or pure maple syrup. If you like your drinks sweeter, add an additional 1/2 to 1 Tablespoon.
*Add as much ice as you'd like, I don't like a ton so I do 1/4 cup so it doesn't water it down
