My slow cooker chicken fajitas are wholesome, simple, and full of flavor. The homemade fajita seasoning not only creates a flavor that stands out but keeps nasty additives out of the food! These fajitas have become a go-to supper in our house, especially after church. I hope this meal finds a special place in your kitchen!
Grease the slow cooker lightly with olive oil or avocado oil (not canola oil) and add chicken breast.
Rinse bell pepper with water and pat dry with a towel. Cut in half. Store half in an airtight container for another use. Cut the other side into medium-sized chunks. Add to slow cooker.
Slice onion in half. Store half in an airtight container for another use. Dice the other side into medium-sized chunks. Add to slow cooker.
Add salt, pepper, garlic powder, chili powder, cinnamon, and cumin to a small bowl and mix to combine. Pour over chicken and veggies in slow cooker.
Add chicken broth to slow cooker and stir to evenly mix the seasonings.
Cook for 3 hours on high or 6 hours on low. Avoid opening the slow cooker until cooking time is finished.
When finished cooking, shred the chicken and serve on tortillas of choice with your favorite toppings. Enjoy!
