During summer months I find myself using our crock pot quite often. It not only frees up some time for summer fun but also helps our house stay cool. As the days began moving closer to August I began experimenting with spices and cook times to make amazing slow cooker chicken fajitas. After a few test runs, I found the perfect balance which is the recipe I’m sharing today.

Chicken Fajita Ingredients

  • 1 large chicken breast (or 2 small) (fresh or frozen)
  • 1/2 green bell pepper
  • 1/2 yellow onion (or full small onion)
  • 1/4 cup water
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/8 tsp ground cinnamon
  • 1/4 tsp ground cumin

How to Make Slow Cooker Chicken Fajitas Recipe

  1. Grease the slow cooker lightly with olive oil or avocado oil (not canola oil) and add chicken breast(s).
  2. Rinse the bell pepper then cut in half. Set half to the side (store in the fridge or freezer) and slice the other half vertically into strips any width you desire. Add to slow cooker.
  3. Peel off the outer layer of your onion and slice it in half (storing half in fridge/freezer) or use a whole small onion. Then slice the onion horizontally into small slices any width you desire. Add to slow cooker.
  4. In a small bowl combine all seasonings for fajita seasoning and mix until combined. Then pour over chicken and veggies in the slow cooker.
  5. Add water to slow cooker, stir with a spoon to distribute seasoning evenly and add lid to slow cooker.
  6. Cook for 3-4 hours on high or 7-8 hours on low (for both fresh or frozen). Avoid opening the slow cooker until cooking time is finished.
  7. When finished cooking, take the lid off the slow cooker and using a spatula cut your chicken into strips any size you desire. Enjoy chicken fajita mix on tortillas or tortilla chips with fixings!

You have the option of using either chicken breasts or ground chicken for this recipe. I personally prefer chicken breasts as they can be sliced into the authentic fajita style, though ground chicken will work just as well.

There’s a few ways you can serve slow cooker chicken fajitas. My favorite way is on homemade tortillas with shredded cheese, hot sauce, and sometimes shredded lettuce. We’ve also used this fajita recipe to make nachos for a different twist. Both were super good. You could also just eat it with a fork and serve with rice.

Keep any leftover slow cooker chicken fajitas fresh by storing them in an airtight glass container in the refrigerator for up to 5 days. For extended storage and to maintain optimal flavor, you can use an airtight, freezer-safe glass container to freeze the leftovers for up to 3 months.

  • Should I cut chicken for fajitas before cooking? No, you don’t have to cut your chicken before cooking since it’s in the slow cooker.
  • Does slow cooking tenderize chicken? Yes it does! Low and slow are key to tender chicken.
  • Do I need to cook the vegetables before adding them into the crockpot? Not at all, just toss them in raw.
  • Is it ok to use frozen chicken for this recipe? Yes! I do most nights to save time.
  • Is it better to cook chicken on high or low in a slow cooker? It’s always best to cook food on low in the slow cooker but cooking it on high works great as well.
  • Can you use taco seasoning instead of the homemade fajita seasoning? While you can use taco seasoning, note that it won’t capture the authentic fajita flavor. Personally, I wouldn’t recommend it, especially the pre-packaged taco seasoning packets.

    So easy to make and very delicious!!!
    Lots of items you can offer to put on these if having guest over and want to make the meat go further. Set out shredded lettuce, sliced avocado, diced tomatoes & grated cheese. Maybe some black beans and jalapeños.

    I used the little leftovers I had to make nachos.
    So fast and an easy delicious meal second time around.
