When I was developing my sourdough strawberry sweet rolls, I needed a strawberry filling, so I decided to create a wholesome recipe out of fresh berries. I’ve made this filling without measurements many times for pies, so I got busy writing down the amounts, and the recipe was born.

How to Use Strawberry Filling

You can use this filling in sweet rolls, pastries, cheesecakes, cakes, cupcakes, and even as a pie filling.

Ingredients You’ll Need

  • Sliced strawberries (about 28 berries)
  • Raw honey
  • Lemon juice
  • Flour slurry for thickening (all-purpose flour + water, mixed)

How to Make Strawberry Filling with Fresh Berries

Rinse strawberries with water and dry them with a towel.

Slice off the green tops of the berries, and then slice them into 4 pieces each.

Add sliced strawberries to a medium-sized saucepan on medium heat along with honey and lemon juice. Cook for 15 minutes. 

Stir occasionally, and use a masher or spoon to break down the fruit.

Whisk in the flour slurry mix to thicken and bring to a simmer on low-medium until the mixture is thick, about 5 minutes.

Remove from heat and let cool completely.

Storing Strawberry Filling

Place cooled-down strawberry filling in an airtight container for up to 1 week or 3 months in the freezer.

What is strawberry filling made of?

  • 1/4 cup + 3 Tbsp Honey
  • 1 tsp lemon juice
  • Flour slurry for thickening 2 Tbsp all purpose flour + 2 Tbsp water, mixed together
