Tips for Baking with Sourdough During Fall
- With the weather getting cooler, bulk fermentation will take longer. Make sure you’re fermenting dough for 10-12 hours. The dough should double or triple in size and needs to have visual air bubbles.
- Feed your starter 4–12 hours before baking with it for recipes that call for fed starter.
- Recipes that call for an unfed starter or discard means you don’t need to feed your starter before you use it in a recipe. It can be cold when you add it in, straight from the fridge.
- Your starter may need less water when feeding it in cooler months.
- When mixing together a recipe, you may find you need more liquid during the cooler months. Add 1 tablespoon at a time.
