How to Make Strawberry Glaze for Angel Food Cake

Rinse strawberries with water and pat dry with a kitchen towel.

Slice strawberries into 4 pieces each and take the green tops off.
Place the cut strawberries into a medium-sized saucepan along with cane sugar, vanilla, water, cornstarch, lemon juice, and salt. Stir to combine.

Place on the stove top and heat over medium-high heat to bring it to a boil.

While you heat the mixture, grab a masher or fork and mash berries into small pieces. You want to leave strawberries chunks so don’t mash too much.
Cook until glaze has thickened, stirring constantly to ensure it doesn’t burn (about 3-4 minutes after it begins to boil). Should coat the back of a spoon.
Once thickened place into a room temperature glass jar and let cool on the counter. As it’s cooling the glaze will thicken!
Once it’s cooled, store in the fridge for 1-2 weeks. Enjoy!

It’s best to store this glaze after it’s completely cooled down in an airtight container. You can keep it in the fridge for 1-2 weeks. If it separates, simply stir it back together.

Freeze this glaze in an airtight, freezer-safe jar for 3-6 months. To thaw, simply place the jar in the fridge overnight. That’s it, it’s that easy!
