My sourdough Alabama white BBQ chicken bacon pizza is so creamy, savory, and cheesy. It’s made completely from scratch from the white sauce to the sourdough crust. I created this pizza to replicate our favorite down in Chattanooga, TN!

You’re going to love this pizza! It’s one of my husband and I’s favorites. The sourdough pizza crust adds the perfect base, and the pan-seared chicken mixed with oven-baked bacon completes the pizza.
Mixing up some homemade Alabama white BBQ sauce for this recipe makes all the difference, trust me. It’s so simple to make and adds the creamiest texture to the pizza.

What is Alabama White BBQ Sauce?
It’s a mayo-based BBQ sauce that Robert Lee Gibson “Big Bob” invented at his restaurant in Decatur, Alabama: Big Bob Gibson’s Bar-B-Q. It’s creamy, savory, and perfectly tangy.

Ingredients
- avocado oil: or you could use coconut oil
- boneless skinless chicken breast: I use one large but you can use two small
- sea salt: this is my favorite wholesome salt option
- ground black pepper: you can use already ground or freshly cracked
- uncured bacon: I recommend and prefer uncured but regular works great too
- homemade sourdough pizza dough: you can find my recipe here on the blog
- homemade Alabama white bbq sauce: you can find my recipe here on the blog
- shredded mild cheddar cheese: grated at home works best
- freshly grated Parmesan cheese: I recommend grating a block at home

How to Make Sourdough Alabama White BBQ Chicken Pizza



Pan-Sear Chicken
- Heat avocado oil in a medium to large sized skillet over medium heat.
- While oil is warming, cut chicken breast into small bite sized pieces (about 1/2 inch each).
- Add diced chicken into a bowl with 1 tsp sea salt and 1/2 tsp pepper. Stir to evenly coat.
- When oil is hot, add chicken to pan. Let chicken pieces cook on one side for 4-5 minutes. Don’t move them while cooking.
- Once golden brown, flip each piece. Cook an additional 4-5 minutes or until golden brown and fully cooked. Remove from pan and set aside for now.



Bake the Bacon
- While chicken is cooking, preheat the oven to 425 degrees (If you’re using a pizza stone for the pizza, place it in the oven now).
- Cover a sheet pan with parchment paper and place the bacon strips on it so they’re not touching.
- Sprinkle 1/4 tsp pepper all over the top of the bacon so they’re evenly seasoned.
- Bake for 12-14 minutes until bacon is fully cooked and crisp.
- Carefully, with tongs, place cooked bacon strips on a plate lined with paper towel or a napkin to remove grease. Set aside for now.



Assemble & Bake Pizza
- Roll dough out on a lightly floured surface to the thickness you desire (1/4″ for thin crust or 1/2″ for hand-tossed). Make this a circle or rectangle, shape is up to you. If you’d like a crust around the edges, use your finger to roll up the sides all around the dough.
- Place crust on a parchment lined baking sheet pan or a preheated pizza stone and bake for 10 minutes without any toppings.
- While it’s baking chop cooked bacon into pieces and shred cheese if you haven’t already.
- When crust has pre-baked, add Alabama white sauce (as much as you desire), cooked chicken, chopped cooked bacon, shredded cheddar cheese, and optional Parmesan cheese.
- Optional crust flavor: brush a little melted butter, avocado oil, or olive oil on the crust then sprinkle on a little garlic powder and sea salt around the edges.
- Bake for 15-20 minutes until the crust is golden brown and cheese is bubbly. Remove from oven, let sit for 2-3 minutes, slice, and enjoy!
Variations
- Different sauce – you can use red BBQ sauce instead of white sauce if desired.
- Different cheese – you can use low-moisture mozzarella cheese if desired.
- Add heat – add pickled jalapeños or banana peppers for a little heat.

Storing Instructions
After the pizza cools, store leftover slices in an airtight container in the fridge for up to 2 days. You can also freeze them for up to 3 months.
Reheating Instructions
I highly recommend reheating leftover pizza in the oven or a toaster oven, not the microwave. Place the slices you’d like on a pan and warm at 400 degrees Fahrenheit for 8–10 minutes or until the cheese is bubbling.
