Banana Chocolate Chip Bread Pudding

Tips for Baking Banana Bread Pudding

For banana bread pudding you want to use the ripe bananas. Their peels should be turning a little brown. This allows the banana to act like an egg when it breaks down during the baking process.

If you want your banana bread to be extra moist, try adding in a few tablespoons of unsweetened apple sauce or sour cream.

Ingredients You’ll Need

  • ripe bananas
  • raw honey
  • ricotta cheese
  • milk
  • all-purpose flour
  • baking powder
  • semi-sweet chocolate chips
  • walnut pieces (optional)

How to Make Eggless Banana Bread Pudding

Preheat your oven to 425 degrees Fahrenheit.

Remove the peels from all 4 bananas then place them into a mixing bowl. Discard the peels. Use a fork or masher to mash bananas until they turn into a thick paste.

Now add honey, ricotta cheese, and milk. Stir until evenly incorporated.

Add baking powder and flour to wet ingredients. Stir just until everything is evenly mixed. Don’t over-mix.

Optional: Stir in chocolate chips and/or walnut pieces.

Lightly grease a ceramic baking dish (about 9×12″) and pour the banana bread pudding mixture in.

Bake uncovered for 35 minutes. (If you prefer a more moist bread pudding, bake for 30 minutes instead.)

How to Store Leftovers

Store leftover banana chocolate chip bread pudding in an airtight container in the fridge. It’ll be good for 3 days.
