Chipotle Pineapple Chicken Tacos (sheet pan recipe)
These chipotle pineapple chicken tacos are by far the easiest recipe to make. You simply dump the ingredients on a sheet pan and bake for 25 minutes. That’s right, it’s that simple. The savory chipotle spice blend pairs perfectly with the sweet pineapple. You’re going to love it!

My mouth is watering just writing this recipe post, haha! We had these tacos as leftovers the other night, and they were still fantastic reheated. You’re going to fall in love with this recipe just as much as we have. It’s become a weeknight staple, along with my spicy mango chicken tacos and a sheet pan recipe.
Inspiration behind chipotle pineapple chicken tacos
I’ve always loved pineapple, even as a young child. It’s been one of my favorite fruits my entire life. Also, I absolutely love tacos. So I wanted to create a quick and easy summer recipe that combined two of my favorite things.
I know these tacos will become a go-to recipe during summer, especially on busy nights. It’ll only take up 10 minutes of your time. How awesome is that?!

Ingredients you’ll need
- chicken breasts (boneless, skinless)
- fresh pineapple chunks
- red onion
- fresh garlic cloves (or garlic powder)
- raw honey
- chipotle seasoning (salt-free)
- ground black pepper
- salt
- taco shells (soft or hard shell)
- Optional – fresh cilantro

How to make chipotle pineapple chicken tacos
Prep
Line a baking sheet pan with parchment paper and preheat the oven to 425 degrees.
Dice the onion and cut the pineapple into chunks (you can substitute for frozen pineapple if needed).
In a small bowl mix together salt, pepper, and chipotle seasoning. Set aside.
Bake
Place chicken breasts on a sheet pan along with onions and pineapple chunks.

Mince garlic cloves over top of chicken, onions, and pineapple.

Sprinkle seasoning mix over everything on the sheet pan focusing on the chicken.
Drizzle honey over everything on the sheet pan.
Bake for 25 minutes or until the chicken is fully cooked.

Assemble Tacos
Remove from oven, dump chicken off of parchment paper and onto the pan. Shred the chicken with 2 forks (or place in a bowl and shred with an electric mixer on low speed).
Grab tortillas (you can warm them if preferred) and fill them with a generous amount of the baked chipotle pineapple chicken.
Finish them off with an optional topping of fresh cilantro and a dollop of sour cream if you desire. Enjoy!

Up until I made this recipe my biggest culinary achievement was a Jack’s frozen pizza with cheese added on top. Now I can make something way better in only a little extra time 🙂
