Spicy Mango Chicken Tacos (sheet pan recipe)

Spicy mango chicken tacos are easy to whip up any night of the week. Just dump the ingredients on a parchment-lined sheet pan and bake for 25 minutes. Each bite is full of savory chicken, sweet mango, and fresh cilantro. If you’re anything like me, you’ll crave these tacos all summer long!

I love tacos more than most people. I could eat chicken tacos over and over again without getting tired of them.

There’s just something about shredded chicken cooked with tons of seasonings, fresh veggies, and a little sweetness from fruit that makes my mouth water.

Because of my love of tacos, I wanted to develop a tasty sheet pan recipe that could go in the Summer Table Series.

What you’ll need to make these tacos

You don’t need many ingredients for this recipe, but the ones you do are wholesome. You can feel good about feeding this to yourself and your family!

  • a yellow onion
  • a jalapeño
  • a mango 
  • boneless, skinless chicken breasts
  • chili powder (salt-free is best)
  • garlic powder
  • sea salt
  • ground black pepper
  • tortillas (highly recommend making my sourdough tortillas)
  • optional – fresh cilantro

How to make spicy mango chicken tacos

To start out you’ll preheat the oven to 425 degrees Fahrenheit and cover a sheet pan with parchment paper.

Then in a small bowl, you’ll stir together the garlic powder, pepper, salt, and chili powder with a spoon until evenly mixed.

Next, slice half of an onion into strips. When you’re done set it aside. Then cut up the mango into chunks and set it aside as well.

Finish prepping by slicing up the jalapeño into small chunks and removing the seeds. Set them aside.

Next, place chicken on the sheet pan along with sliced onion, diced jalapeño, and mango cubes.

Pour the seasoning evenly over the chicken, onions, jalapeño, and mango. When you’re finished pop the sheet pan in the preheated oven and bake for 25 minutes.

Now assemble the tacos when the chicken is fully cooked. You’ll first need to shred the chicken with two forks. Then you’ll grab warmed tortillas and fill them with a generous amount of the baked mango chicken.

To finish them off add an optional topping of fresh cilantro and a dollop of sour cream if you desire. Now it’s time to enjoy!

Tips & variations

  • You don’t like spicy food? Leave out the jalapeño peppers or substitute them for green bell peppers.
  • Want more spice? Double the jalapeño for a spicier taste.
  • Want to make it kid-friendly? Leave out the jalapeños so it won’t be spicy.
  • Need a substitute for the mangos? Try fresh pineapple chunks.
  • For the best taco shells, whip up a batch of my sourdough tortillas.
  • To add more freshness, top your tacos with fresh cilantro.

  • 1/2 tsp ground black pepper
  • tortillas (soft or hard shell)
  • optional - fresh cilantro

Instructions

Prep

  1. Preheat oven to 425 degrees Fahrenheit and cover a sheet pan with parchment paper.
  2. In a small bowl, stir together garlic powder, pepper, salt, and chili powder with a spoon until evenly mixed. Set aside.
  3. Slice half of an onion into strips and set aside.
  4. Cut up mango into chunks and set it aside.
  5. Slice jalapeño into small chunks and remove the seeds. Set aside.

Bake

  1. Place chicken on the sheet pan along with sliced onion, diced jalapeño, and mango cubes.
  2. Pour seasoning evenly over the chicken, onions, jalapeño, and mango.
  3. Bake for 25 minutes or until the chicken is fully cooked.

Assemble Tacos

  1. Remove from oven and shred the chicken with 2 forks (or place in a bowl and shred with an electric mixer on low speed).
  2. Grab warmed tortillas and fill them with a generous amount of the spicy baked mango chicken.
  3. Finish them off with an optional topping of fresh cilantro and a dollop of sour cream if you desire. Enjoy!
