I’ve never been a broccoli eater. I used to hate it growing up. That all changed when I learned how to cook with it. You won’t find raw broccoli in our house for dipping or huge chunks in dishes. But you will find it chopped up and added into dishes like this stir fry recipe.

Stir Fry
- large boneless, skinless chicken breast (or 2 small)
- 1 tsp salt
- small yellow onion
- 1 tsp pepper
- 1 tsp garlic powder
- stalk of broccoli (I prefer organic)
- 1 Tbsp olive oil
Sauce
- 1/4 cup malt vinegar
- 1/8 cup raw honey
- 1/2 tsp grated ginger root (or paste)
- 1/8 cup chicken broth
- 1 tsp cornstarch

How to Make Easy Chicken Broccoli Stir Fry
- First, cut chicken breast into 1″x1″ chunks. Then chop broccoli crowns into small pieces.
- Second, heat olive oil on medium-high heat and add in chicken, broccoli, onions, salt, pepper, and garlic powder.
- Next, cook these ingredients for 12-15 minutes, stirring occasionally. If your ingredients begin to stick add a little water.
- While the stir fry is cooking, in a small bowl, mix together all sauce ingredients until combined.
- Finally, turn heat down to medium-low and add sauce to the pan when there’s 5 minutes left on the timer. Stir frequently until thickened and chicken is cooked all the way through.
