Tips for Baking Banana Bread Pudding Without Eggs

Anytime you’re baking without eggs, you’ll want to do a little planning ahead of time. For banana bread pudding, whether that be chocolate banana bread pudding or banana bread pudding muffins, you only use the ripest bananas. Their peels should be turning a little brown. This allows the banana to act like an egg when it breaks down during the baking process. If you want your banana bread to be extra moist, try adding in a few tablespoons of unsweetened apple sauce. This will act as an egg as well.

Ingredients for This Recipe

  • 4 extra ripe bananas
  • 2 tsp Honey
  • 1 cup ricotta cheese organic or whole (not many added ingredients is best)
  • 3/4 cup oat milk can substitute for any milk
  • 1 cup all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/3 cup chocolate chips semi-sweet or milk chocolate chips (optional)
  • 1/3 cup walnut pieces (optional)

How to Make Eggless Banana Bread Pudding

  1. Before getting started, preheat your oven to 425 degrees Fahrenheit.
  2. First, unpeel all 4 bananas and place them into a mixing bowl. Use a fork or masher to mash bananas until they turn into a thick paste.
  3. Now add honey, ricotta cheese, and oat milk to mashed bananas. Use a wooden spoon to stir until evenly incorporated.
  4. Then add baking powder and flour to the wet ingredients. Stir just until everything is evenly mixed. Don’t over-stir to keep the bread pudding fluffy.
  5. OPTIONAL: now stir in chocolate chips and/or walnut pieces.
  6. Finally, lightly grease a baking dish and pour the banana bread pudding mixture in. Place in oven and bake uncovered for 35 minutes. (If you prefer a more moist bread pudding, bake for 30 minutes instead.)

*When baking with honey be sure to use unfiltered, raw honey. Processed honey often has additives
