Strawberry Balsamic Chicken Breast
The fresh berries make this strawberry balsamic chicken breast perfect for any summer evening. The sweet balsamic tang adds the perfect flavor that brings all three ingredients together. Whether you’re cooking up a simple supper or entertaining guests, this recipe will be a hit!

Now that strawberry season is over, I wanted to whip up a recipe that would help you use up those leftover berries. After I developed this recipe, I served it for supper one night to test it out, and my husband fell in love with it.
I love serving this chicken with a side of old-fashioned mashed potatoes or brown rice. You can pair it with many things, even a side salad. If you wanted to whip this chicken up ahead of time, you could shred it and make a strawberry balsamic chicken salad.

How to make strawberry balsamic chicken

Heat avocado oil or butter in a skillet over medium heat.
Add onions and cook on medium heat for 2 minutes.
While the onions cook, in a small bowl, combine salt, pepper, onion, and garlic.
Season chicken with the mixture on both sides then add to the pan with the onions. Cook on medium for 8 minutes.
Flip the chicken and cook for 8-10 minutes until it is cooked fully. Add a little water if bottom of the pan is starting to burn.
While the chicken is cooking, in a small bowl, stir together honey and balsamic vinegar with a spoon.
When there are 3 minutes left on the chicken cooking, pour balsamic honey mixture into the pan and add strawberries.
While it cooks stir the berries and liquid to combine and prevent burning.
Take off heat and enjoy!
Storing leftovers
Store leftovers in a glass, airtight container for up to 2 days in the fridge. You can also freeze the leftovers to preserve the flavor. It’ll last up to a month in the freezer.
FAQs
Can I let the chicken marinate with the sauce and berries before cooking?
Yes, you can. Just make sure you toss the marinade if you don’t pour it into the pan with the chicken.
Could I grill this chicken?
Of course! I would marinate the chicken in the balsamic sauce and then grill it like you would a regular chicken breast. Then, in a small pan or foil pouch, grill the strawberries with more sauce to pour over the chicken when it’s done cooking.
