Every time I write this recipe on our weekly meal plan, my husband gets excited. He’s not much of a soup guy but this is one of his favorites! With freshly grated cheddar cheese and smoked paprika, each bite is hearty and wholesome.

One of my favorite activities is turning hearty foods into wholesome meals. I love swapping out processed and premade items for whole ingredients. That’s exactly what inspired me to develop this recipe.

I love cheeseburgers and of course an easy cheeseburger soup but I hate processed ingredients. I wanted to make a healthier recipe that still tastes amazing. That’s exactly what we have here today! Healthy doesn’t mean bland it means choosing wholesome foods to cook with.

Easy Cheeseburger Soup Ingredients

  • 1/4 lb. ground hamburger (organic and/or grass-fed)
  • 2 medium potatoes (or 6 very small)
  • 2 cups shredded cheddar cheese
  • 1/2 of a yellow onion
  • 2 cloves garlic (or 1 tsp garlic powder)
  • 1 tsp Dijon mustard
  • 1/4 tsp smoked paprika
  • 1 tsp pepper
  • 1 1/2 tsp salt
  • 2 cups vegetable broth or stock
  • 1 cup milk ( I use homemade cashew cream)
  • 2 Tbsp unbleached all-purpose flour
  • 1 Tbsp olive or avocado oil

How to Make Easy Cheeseburger Soup

Potatoes

  1. Begin by rinsing potatoes, pat dry, peel and cut into small chunks (size of choice)
  2. Add potato chunks to a medium sized pot and rinse with water, drain, and repeat. (This helps get rid of starch for easier cooking).
  3. After the second rinse and drain, fill pot with water about 1/2 inch above potatoes. Place on stovetop and bring to a boil over high heat.
  4. Then once boiling, turn heat to low-medium and cook covered for 20 minutes.
  5. During this time begin soup.

Soup

  1. Meanwhile the potatoes are cooking, heat olive oil in a second pot on medium heat.
  2. Dice onion and mince garlic cloves then add to olive oil in second pan.
  3. Add ground hamburger, salt, and pepper to pot.
  4. Cook on medium-high, using a spatula breaking beef into small pieces for 8-10 minutes or until cooked fully.
  5. Next turn down heat to low, add flour, and cook roux for 2 minutes.
  6. Turn heat back to medium and whisk in vegetable broth, Dijon mustard, and paprika until evenly combined.
  7. Once potatoes are done drain them and add to soup along with shredded cheese and milk.
  8. Finally, simmer uncovered on low for 15 minutes, stirring occasionally. Enjoy!

Store cooled down cheeseburger soup in an glass, airtight container for up to 3 days in the refrigerator. If you prefer freezing leftovers, as do I, place the container in the freezer for up to 3 months.

Cheeseburger Soup Reheating Instructions

Refrigerated soup: use a pan on the stovetop over medium heat to warm.

Frozen soup: place in a turned off oven then preheat to 400 degrees heating until warm.
