- chicken breast: use boneless, skinless
- bell pepper: I prefer green bell pepper
- onion: use yellow or white onion
- chicken broth: make sure you use low-sodium

How to Make Slow Cooker Chicken Fajitas
Grease the slow cooker lightly with olive oil or avocado oil (not canola oil).

Rinse bell pepper with water and pat dry with a towel. Cut in half. Store half in an airtight container for another use. Cut the other side into medium-sized chunks. Add to slow cooker.

Slice onion in half. Store half in an airtight container for another use. Dice the other side into medium-sized chunks. Add to slow cooker.

Place the chicken into the slow cooker.


Add salt, pepper, garlic powder, chili powder, cinnamon, and cumin to a small bowl and mix to combine. Pour over chicken and veggies in slow cooker.


Add chicken broth to slow cooker and stir to evenly mix the seasonings.

Cook for 3 hours on high or 6 hours on low. Avoid opening the slow cooker until cooking time is finished.

When finished cooking, shred the chicken and serve on tortillas of choice with your favorite toppings. Enjoy!

To save time, you can chop the onions and peppers ahead of time. Just store them in an airtight container in the fridge.
You can also mix up the fajita seasoning ahead of time and store it in an airtight container.
This way you can just dump and go, no prep work!

How to Serve this Slow Cooker Chicken Fajitas Recipe
There are a few ways you can serve slow cooker chicken fajitas. My favorite way is on homemade sourdough tortillas with shredded cheese, hot sauce, and shredded lettuce.
We’ve also used this fajita recipe to make nachos for a different twist. Both were super good. You could also just eat it with a fork and serve with rice.

How to Store Leftovers
Store leftover fajitas in a glass airtight glass container in the fridge for 2 days. For extended storage and to maintain the best flavor, store in the freezer for up to 3 months.
Even if we’re going to eat the leftovers the next day, I store them in the freezer. The flavor is so much better!

Crockpot Chicken Fajitas Recipe FAQ
No, you don’t have to cut your chicken before cooking since it’s in the slow cooker.
Yes it does! Low and slow are key to tender chicken.
Not at all, just toss them in raw.
Some people say no but I do sometimes. Just add 1 hour to the cook time if cooking on high or 2 hours if cooking on low.
Either work well! But if you have the time cook it low and slow.
I recommend making the homemade fajita seasoning in my recipe.
You can use either. Just make a note that ground chicken will cook a little faster.
You can cook them on high for 3 hours or low for 6 hours.

Lots of items you can offer to put on these if having guest over and want to make the meat go further. Set out shredded lettuce, sliced avocado, diced tomatoes & grated cheese. Maybe some black beans and jalapeños.
I used the little leftovers I had to make nachos.
