When I’m running low on time, I love making this sweet pepper chicken sheet pan dinner. It makes prioritizing a wholesome home-cooked meal possible on nights when the to-do list is long. You can prep this meal, pop it in the oven, and go about your evening while it cooks. What’s better than that?!

Ingredients You’ll Need
Sweet Pepper Chicken
- mini sweet peppers
- onion
- chicken breasts (boneless, skinless)
- salt
- ground black pepper
- garlic powder
Potatoes
- medium sized potatoes
- avocado or olive oil
- salt
- ground black pepper

How to Make Sweet Pepper Chicken Sheet Pan
Preheat oven to 425 degrees and cover a large sheet pan with parchment


Slice peppers into strips and dice the onion. Set aside.
In a small bowl mix salt, pepper, and garlic powder. Set aside.

Place chicken breasts and peppers on one half of the sheet pan.

Season chicken and peppers with the seasoning mix.

Peel and slice potatoes into small to medium sized chunks.

Place sliced potatoes on the other half of the sheet pan and season with salt, pepper, and avocado oil

Stir to coat potatoes evenly.
Bake for 30-35 minutes and enjoy!

Storing Leftovers
If you have leftovers, store them in an airtight glass container for 2 days in the fridge or the freezer for up to a month.

- 8 mini sweet peppers
- 1/2 of an onion
- 2 chicken breasts (boneless, skinless)
- 3/4 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp garlic powder
Potatoes
- 3-4 medium-sized russet potatoes
- 1 Tbsp avocado or olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Instructions
